Aval payasam recipe with step by step photos. Payasams or kheers are one of the easiest and quickest desserts that can be made. I am sharing this poha kheer recipe today which I made on the occasion of Navratri.

Ladies, especially working ladies always have a shortage of time that’s why they generally go for simple and fast-food and are somehow ignoring nutrition, so why I thought to share some good nutritional recipe’s which is good to eat and fast to cook. 

Aval payasam or Poha kheer is also called Atukula Payasam in the south. Some tips and variations while preparing the aval payasam recipe. firstly, I have used thick poha or aval for this recipe and I heavily recommend the same to use. the thin and medium poha can easily dissolve in milk and thus you may not have any crunchy effects from the kheer. secondly, I have used fresh full cream milk for this recipe. but this can be extended and replaced with thick coconut milk too. I personally like cow’s milk, but coconut milk is also an option. lastly, the atukula payasam can be served warm or chilled based on your preference. if you are serving it the next day, make sure to add milk and maintain the consistency.

Heavy Bottom Pan: Heavy bottom pan is best for reducing milk as heavy bottom will prevent milk to sticking.

Ingredients

  • milk………………………………..1lit

  • Poha(puffed pressed rice flacks)……….1/2 cup

  • cooked rice……………………………………….1/2 cup

  • sugar…………………………………………………7tbsp

  • Cardamom small……3 to 4

  • Milk-maid(condense milk)….1/2 tin

  • dry fruits chopped like almonds,kishmish,chironji, cashew etc

  • saffron……………………………6-7 strings

Directions

  • Use cooked rice in this recipe
  • Wash poha and drain all the water through big strainer keep aside
  • Boil milk in a heavy bottom pan and add rice and washed poha in it add sugar and condense milk and stir well
  • Bring it to boil  keep flame medium and stir well, add cardamom and saffron in it
  • Add chopped dry fruits in it boil till kheer become thick “this will happen very soon because of poha so little careful”
  • Garnish with dry fruits and serve chilled
