Gajar Matar Dry Curry– Winter season comes with lot’s and lot’s of wonderful vegetables like peas, carrot, turnip, cabbage, cauliflower, green vege’s and lot’s more. All these vege’s give superb taste and exotic flavours and especially when combined with Indian spices ymmmmmmm I must tell you this is a secret of Indian chatkare ummmmmm…….I bet you, u try these exotic Indian recipes and win your loved one’s heart as we all know very well “way to the heart is through the stomach ” am I right?

Moreover, Gajar matar stir fry is one of my favourites. A simple Indian stir-fry made with winters carrots and green peas. In fact, This gajar matar sabzi was a staple in my house growing up. This flavorful vegetable with the sweetness of the carrot.

What I like most about this sabzi is that it is so simple. As a matter of fact, this is exactly how it was made in my house- without onions and tomatoes and just with very basic spices.

However, I am pretty sure my mom’s version was even simpler than this. The reason it was kept so simple was to make sure that the flavours of the fresh vegetables shine through. I love cooking this dish in mustard oil since that adds its own flavour to the dish, however, you can use any oil of choice. And of course, a good garnish with cilantro is a must!

Is the gajar matar recipe gluten-free?

Yes, Absolutely most of the indian dry curries are gluten free.

Can we add onions and tomatoes?

Yes you may. Cook the onions first and then add the tomatoes and cook them and then add the spices and vegetables.

Can we add garam masala?

Yes, you can sprinkle some on top in the end. Infact, garam masala adds extra flavour to the vegetable.

Do we have to use mustard oil?

No, you can use any oil. I just prefer mustard oil in such recipes because of its flavor. 

Is the recipe vegan?

Yes, we use mustard oil in this dry curry and mustard oil is vegan. Mustard oil is an oil made from ground or pressed mustard seeds and not an animal product

Ingredients

  • carrot- 1/2 kg

  • peas – 1/2 kg

  • garlic – 3-4 cloves

  • ginger – 2″piece

  • green chilli – 1 big

  • jeera – 1 tsp

  • red chilli powder – 1/2 tsp

  • coriander powder – 1/2 tsp

  • turmeric powder – 1/2 tsp

  • salt – as per taste

  • oil – 2 tbsp

Directions

  • wash and peel carrots, take out peas from pods, crush ginger and garlic, chopped green chillies.
  • heat Kadai  add oil  for 2 min then add jeera  stir till crackle, add  ginger, garlic and green chilli in it stir and add carrot and peas in it mix well and add all dry masala mix and cook covered on a medium flame for 8 to 10 min all till done garnish with chopped green coriander leaves serve hot with paranthas or roti
