2 cups grated vegetables e.g. Carrot, peas, potatoes(par boiled) , corn
1 chopped capsicum
2 chopped onion
1½ cups plain flour
3 teaspoons baking powder
1 cup grated cheese
Preheat oven to 180°C.
Grease a 12 hole muffin pan.
Heat oil in a skillet add onion and stir well add capsicum and stir, add all vegetables and spices stir for two min.
Mix vegetables and ¾ cup of cheese with the sifted flour and baking powder.
Whisk together the eggs/ banana , oil and milk and add to the flour mixture.
Stir until just combined.
Spoon the mixture evenly into the muffin holes and sprinkle with remaining cheese.
Bake for 25 minutes.
My special tip :
Love to serve these muffins warm. They are very tasty and healthy as well .They are better eaten on the day they were cooked. Freeze any spare muffins to have on hand as a healthy snack.
