Savoury Semolina Cake or Handvo // How to make Handvo // How to make suji handvo- A detailed recipe of handvo with suji and vegetables. A healthy and tasty mixed vegetable cake recipe from the popular Gujarati cuisine. It is generally prepared from lauki or bottle gourd combined with mixed lintel dough and baked till it attains a cake-like texture. However, I made it with semolina or suji.

Baking is my second love as my first love is my family. When I cook for my family, I want to see that spark in their eyes and smiles on their faces, which increases my confidence level and makes me happy. Cooking is fun and experimenting with new dishes is very exciting. It gives a boost like meditation that’s why whenever I feel low, I just cook something for my family. Their smiling faces give me amazing strength. Today in the baking series I am sharing a Gujarati delight- ‘A semolina cake’ which they call HANDVO. A very interesting savoury semolina cake …basically a mixture of vegetables with semolina and coconut. A very tasty snack for evening tea or breakfast. 

How I Love Gujarati Dishes:

I have posted quite a few Gujarati cuisine recipes till now on my blog. However, I feel the handvo recipe is the most healthy recipe. Basically, the recipe is full of nutrients -packed filling spicy bread. The texture and appearance are very similar to any popular cake recipe but have to offer a lot more benefits compared to it. I personally prepare handvo for breakfast and I prepare it well ahead in advance like the previous day. It makes my life easier early morning and I just heat it for 1-2 minutes in the microwave before serving. The savoury cake can be served handvo with green chutney or garlic chutney. Though you can serve it as it is, I usually serve handvo with green chutney or garlic chutney.

Handvo-Savoury Semolina Cake

Handvo is a semolina savoury cake. A very special snack from Gujarati cuisine can be served as a tea-time snack.


  • 2 tsp vegetable oil, plus extra for oiling.

  • 1 cup semolina.

  • 1 cup plain low-fat yoghurt.

  • 3 tbsp water.

  • ¼ cup frozen peas.

  • ¼ cup chopped onions.

  • ¼ thinly sliced carrot.

  • ¼ chopped bell pepper.

  • 1 tsp grated.

  • 1 green chilli chopped finely.

  • Few curry leaves.

  • 1 tsp red chilli powder.

  • ¼ tsp turmeric powder.

  • 1 tsp mustard seeds.

  • ½ tsp cumin seeds.

  • 1 tsp bicarbonate of soda.

  • 1 tsp sesame seeds.


  • Preheat the oven to 180 C and oil a medium loaf tin.
  • Mix together the semolina, yoghurt, water, and salt to make a batter of a medium-thick consistency. Heat the oil in a small saucepan. Add mustard seeds, curry leaves, green chillies and cumin seeds and cook for about 20 seconds until the mustard seeds have popped and the cumin is aromatic. Add the veggies and spices and cook for 2-3 minutes Stir into batter.
  • Stir in the bicarbonate of soda and immediately pour the mixture into the prepared tin and sprinkle over the sesame seeds. Bake in the preheated oven for 20-25 minutes.
  • The cake is ready when a toothpick inserted in the middle comes out clean and when the edges are crisp. Leave the cake to cool in the tin. 
  • When cooled take it out of the tin, and slice them. Serve them with the chutney of your choice.
