The Health Benefits:
Apart from providing the body with energy, what makes sattu, quite a unique ingredient is that its preparing process (Dry roasting)keeps the nutritional values in place, and it can also be stored for longer. It’s high on insoluble fiber which makes it good for your intestines, and is low on glycemic index, making it safe, and in fact beneficial for diabetic. plus it has good proportions of iron, manganese and magnesium, and is low on sodium too.
Generally in Bihar they make sattu paratha by stuffing the mixture in wheat roundels I gave a nutritive twist to this simple sattu ka parantha . I mixed sattu and grated vegetables in wheat flour to make it more healthier. Here is the recipe ..
PREP TIME : 10 MIN
CAL : 209 (ONE PARANTHA)
FOR PARANTHAS:
1 cup wheat flour
1 Cup Sattu (Powdered Roasted Chana Dal)
1 small onion finely chopped
1 green chilly finely chopped
Pinch of turmeric powder
1/4 tsp ajwain seeds
1/4 tsp onion seeds
1/2 cup grated mix greated vegetables
3/4 tsp salt or to taste
1 tsp grated ginger
1 tsp coriander leaves
1/2 tsp olive oil
Directions:
In a Bowl, mix all the ingredients mentioned above . Mix well and add a little water to bind. The consistency should be enough to bind the ingredients together and make a soft dough. Add a little more water if required.
To make parathas, make small rounds of the dough (about lemon size). Roll it a little using a rolling pin and dusting with dry flour.
Dust with dry flour and roll it out nice and round.
Place the paratha on a pan, gently drizzle 3-4 drops of oil on the paratha and the sides. Let it cook evenly from both sides till nice golden brown
Serve hot with mint chutney and curd.
