Today I am sharing a delectable pudding i.e. Grapes and Coconut Panna Cotta with step by step description.

In my house, grapes are eaten a lot as they are one of our family favourites. When we were posted in Pune we used to get very good quality of grapes during the season. Since in India grapes are majorly cultivated in Maharashtra. Before the season, fresh grapes are generally a little sour but as the season comes closer they get sweeter and sweeter. Hence,  these grapes are best for desserts.

This year during the peak of the grapes season, I was able to put aside some exclusively for desserts. I have always wanted to experiment with grapes and coconut. I love the fruity cocktail Piña Colada. So this time I decided to replace pineapple with grapes as they both have a nice sour taste which compliments the coconut wonderfully.

Why Grape Sauce?

You can use any available fruit to make the sauce for the topping. My family has a sweet tooth, hence I decided to use the grape sauce as a topping on a simple Panna Cotta. This is a typical Italian dessert that’s simple to prepare and always dependably delicious. The added vanilla to the panna cotta gave it a nice flavour. Together, the Panna Cotta and the grape sauce created an impressive dessert. You can serve this pretty looking delicious dessert after a meal and it will surely please everyone.

What Is Panna Cotta?

Panna cotta is a very basic pudding that is made of dairy thickened with gelatin. It originated in Italy and its name literally means “cooked cream”. You can eat it straight out of a cup, but it’s often unmolded onto a plate and drizzled with sweet sauce and garnished with fruit. A bite of panna cotta is remarkably creamy, melting in the mouth without a trace of grittiness or lumps.

What if you don’t eat gelatine?

 Gelatine is an animal product and not a vegetarian. You can substitute agar agar or another vegetarian gelatine substitute. This recipe can be a good vegan substitute. For that, you replace fresh cream with coconut cream and milk with almond milk.

Panna cotta, a moulded chilled dessert popular throughout Italy, is easy to make and can be prepared in advance, a delectable pudding.

Ingredients

  • For The Coconut Panna Cotta Layer
  • 130 ml Fresh cream, Amul brand

  • 130 ml  coconut Milk

  • 3 teaspoons Caster Sugar

  • 1-1/4 teaspoon agar agar , unflavoured

  • 1 teaspoon Vanilla Extract

  • 2 teaspoons Water

  • 3 tbsp chia seeds

  • 1/2 cup grape juice

  • For The Green Grapes Layer
  • 2 teaspoons Water

  • 200 ml Green Grapes juice or 2 cup fresh grapes juice

  • 1 teaspoon Caster Sugar

  • 2 teaspoon cornflour, unflavoured

  • 10 Green Grapes, fresh, chopped

  • For garnish
  • Green Grapes, a few, halved

Directions

  • How to make Green Grapes Panna Cotta Recipe
  • To begin making Green Grapes Panna Cotta we have to make the green grapes panna cotta layers. 
  • *For vanilla pannacotta:
  • Soak 2 tbsp chia seeds in 1/4th cup of grape juice. Keep aside and let it bloom.
  • Take agar agar in a small bowl and soak it in 2 teaspoons of water. Keep aside and let it bloom. 
  • Keep your dessert glasses ready. I have used small 120 ml glasses and this recipe makes 4 glasses.
  • Now in a saucepan, add cream and coconut milk. Put it on medium heat. Next, add sugar to the milk-cream mixture and mix till sugar gets dissolved.
  • When the mixture starts bubbling at the edges, remove from heat and add soaked agar agar and one teaspoon vanilla essence. Stir it well till agar agar gets dissolved.
  • Now again place the mixture on low heat, and cook for another 1-2 minutes, stirring continuously. Turn off the flame and cool the mixture for some time.
  • Add bloomed chia seeds in the mixture and mix well
  • Now pour about a 3-inch layer of this mixture into the dessert glasses and place the glasses in the freezer for 30 minutes or until the panna cotta sets. 
  • *For the green grapes layer:
  • Firstly, dissolve cornflour in 2 tbsp of water and keep it aside. You can use agar agar also instead if you want a firm layer.
  • Now, take the green grapes juice into a saucepan and put it on heat. Add sugar to the juice and stir till sugar gets dissolved. 
  • Let the juice boil and then simmer for about 8-10 minutes, then add cornflour mixture. Stir it till juice start sticking to the ladle. Now strain it through a fine shive.
  • Now take out the glasses from the freezer and pour the green juice layer on top of the already set vanilla panna cotta layer. Make sure that the green juice mix has cooled down and is not very hot.
  • Also, add a few pieces of chopped green grapes to this layer and again place the glasses in the freezer for 20-25 minutes or until the green juice layer gets set.
  • Remove the glasses from the freezer and keep them in the refrigerator for at least an hour. Your layered grapes panna cotta is ready to serve. Don’t forget to garnish with some fresh grapes.
  • Serve this layered Green Grapes Panna Cotta at your fancy Indian Dinner Parties as dessert.
  • To make the grapes juice, add fresh grapes to a mixer and puree them. Now strain this puree through a fine sieve to get the juice.
