Green Apple And Cashew curry

These days my garden is full of  green as well as red sweet apples that is why i am posting apple dishes back to back this particular dish is very rich and awesome in taste , one must try it during Navratras as it can be consumed while fasting

we required ..
Green sour apples ….3-4 depend upon size ‘ cubed ‘

Potato………2 cubed and fried
Cashew whole…….1/2 cup roasted
Raisins ……………..4-5 tbsp soaked
Dried apricot ……..1-2 soaked and chopped
Hung curd ………….1/2 cup
Fresh cream ……….3tbsp
Salt & pepper ….as per taste
Sugar 1/2 tsp ‘ optional ‘
Oil ……..1 tbsp & for frying
Ginger …….3-4″ chopped
Green chili ……2 chopped
Cumin seeds…..1 tsp
Cardamom whole….1

Cinnamon stick…… 2″
Whole red chilli ……..1-2
Saffron ………4-5 strings soaked in 1 tbsp of milk

Method

Heat oil in a skillet I would recomend a nonstick one(you can buy one at Amazon store) , add cumin seeds , cardamom , cinnamon and red chilies.stir and add ginger and green Chilies in it. stir and add curd in it , you should be very careful while adding curd to prevent curdling. control heat (oil should not be very hot )
Add apples and cook for 5-6 min till apples change their colour and become translucent , now add all other ingredients and cook for another 3-5 min , add cream , mix the soaked saffron , serve hot with Missi roti or any Indian bread .

Note:
1. The dish can be made with proper makhani gravy also, it will taste awesome .

2. If apples are very sour and you want to balance the taste of curry then add sugar otherwise omit sugar , entirely upto you.

3. If you are using makhani gravy then omit saffron .
