Rajasthani Churma Laddu- Indian sweets are always welcome by sweet lovers especially different types of ladoo’s. These sweet balls or Rajasthani churma laddu are generally made with different types of flour and are very healthy and tasty, special nuts and cardamom flavour gives these ladoo’s a delightful taste. I am sure you will love it.

A Bit Of My Army Life-

Although I was born and brought up in Rajasthan yet, I never cooked this scrumptious delicacy churma laddu before marriage. Maybe because of the easy availability of the dish or maybe it was a continuous and essential supply from my friends. Haha… I tried this recipe a few days back when I had to through a Rajasthani theme party at my house. As by now if you are reading my posts you must have known that we, in the army try to make everything from scratch.

About Cuisine

The cuisine of Rajasthan is primarily vegetarian and offers a fabulous variety of mouthwatering dishes. The spice content is quite high in comparison to other Indian cuisines, but the food is absolutely scrumptious There is an enormous variety of sweets in Rajasthan, which are relished and savoured by all especially churma laddu. In Rajasthan, the sweet dishes are had before the meal, with the main course and after the meal, unlike other desserts. Therefore, sweet dish is never called dessert in Rajasthan. 

As a matter of fact, Rajasthani cuisine is influenced by its rich heritage and arid climatic conditions. The little availability of fresh fruits and vegetables distinguishes their cuisine. A few common ingredients are beans, lentils, gram flour, corn, barley, millet, bajra, bread and dairy products (esp. Ghee).

How To Make Churma laddu

Churma is a Rajasthani delicacy made from ground deep-fried wheat flour dumplings mixed with sugar. Moreover, Churma laddu is popularly enjoyed with a traditional Rajasthani meal of dal&Baati and provides great contrast with its sweet flavour to the whole dish.

In fact, It is a sweet dish made by coarsely grinding deep-fried whole wheat flour dumplings along with sugar. It has a slightly coarse texture and emits the mouthwatering aroma of whole wheat flour roasted in desi ghee.

Step By Step Recipe to Make Churma Laddu

Melt 150 gm. of ghee and mix it in wheat flour. Make a stiff dough using very little water. You can also add milk instead of water.

Make about 15-20 balls with the dough.

Heat the rest of the ghee in a kadhai. Fry balls on low flame till it becomes golden brown.

Churn it in a grinder after it cools down. Mix khoya. Heat 1 tbsp. ghee in a kadhai.

Add cardamom seeds and dalchini. Add the above mixture of wheat flour and khoya. Stir it for one minute. When it cools down, add sugar and chopped almonds.

However, You can serve churma both ways. 1. Make round balls out of it. 2. Or serve at is it is. You can enjoy the taste of choorma for 8-10 days if you keep it in an airtight box.

Serving suggession

Churma laddus go very well with dal bati. In fact, Dal bati is an authentic Rajasthani dish that has a little spicy flavour this sweet dish is served with that dish to subtle that spicy flavour. However, you can eat this tasty sweet delicacy like that also. Churma laddus are very good prasad options too. Prasad is a sweet which we offer to God as bhog.

Ingredients

  • 200 gms Wheat flour

  • 400 gms Ghee / clarified butter

  • 100 gms Khoya / Thickened milk

  • 200 gms Sugar (grounded)

  • 50 gms Soaked almond (finely chopped)

  • 4 Cardamom (small)

  • 1-inch Dalchini

Directions
