Navratan Korma- Navratan korma is a rich luxurious curry dish made with mixed vegetables and a lot of dry fruits. This recipe is flavorful and mildly sweet. It is made with 9 ingredients and consists of plenty of nuts, dry fruits, assorted vegetables, fruits, cream, a lot of spices and a few herbs. There are both vegetarians as well as non-vegetarian versions of preparing this dish.
Navratan Korma refers to ‘nine gems’ which could be the combination of either 9 vegetables or a mixed combo of dry fruits and vegetables. This is a rich, filling and nutritious curry made without cream.

Like I mentioned before, the recipe calls for 9 ingredients and so, here are the 9 ingredients that I have used in the recipe-

✔Cauliflower
✔Beans
✔Carrot
✔Green Peas
✔Cashews
✔Raisins
✔Pomegranate
✔Pineapple
As you can see, I have used a mix of veggies, nuts and fruits here. However, If you don’t have any of these, they can be easily replaced.
For example, you can add paneer and pepper here (red pepper will be nice especially). For nuts, you can use walnuts or almonds in place of cashews. Apple is also often used in navratan korma.
I do love the pineapple here and I would recommend not replacing that though. It is also one of the fruits which you will mostly find in all navratan korma recipes irrespective of how they are made.

Ingredients
Paneer/cottage cheese…….250 gm
Onion………1
Ginger garlic paste…..1tsp
- Mix vegetables:-
Cauliflower …….100gm
Carrot……………..100gm
Peas…………….50 gm
Beans……………50 gm
Potato………….15 gm
Mix fruit cocktail tin…….1/2 tin
Mix Dry Fruits……cashew -5-6, raisins – 5-6
Cashew paste………….2 tsp
Tomato puree………..3tbsp
Curd……………1/2 cup
Coriander powder…….1tsp
Chilly powder………….1/2tsp
Turmeric powder………1/2 tsp
Salt as per taste
Directions
- Chopped onion and green chilly
- Cut mixed vegetable in ¼ inch pieces, steam it in micro for 5 min or boil
- Heat oil in a pan add onion, green chilly and ginger garlic paste it and mix well
- Cook till oil is separated add tomato puree and curd in it (beat curd before adding )
- Add all dry masala in it and mix well, add cashew paste in it and “ bhoono” it properly
- Now add mix fruit’s and mix veg in it and stir well
- Add little water to make thick gravy your nevratan korma is ready to eat
- Garnish with fresh cream and coriander
- Serve hot with nan or tandoori roti ‘Indian bread’
