Bread vadas in sweet & sour curd || Quick Recipe

Dahi Vada is a lip-smacking Indian delicacy, which can be prepared using some easily available ingredients in your kitchen. In fact, Dahi Vada is a famous North Indian side dish that you can enjoy anytime. Therefore, today, I will be sharing a different type of dahi vada made from milk bread. We call it ‘Bread Dahi Vadas’. 

What is Dahi Vada?

Basically, a Dahi vada is a daal fritter soaked in creamy curd or yogurt. Once made, this delectable snack is topped with tamarind chutney and green mint chutney.

Additionally, this can be garnished with ground spices like cumin powder, red chilli powder and chaat masala. 

However, making authentic Daal Dahi vada takes time. So, when you have unannounced guests at home, this Instant Bread Dahi Vadas can be prepared in a short time. In fact, the same is included in my quick menu as it takes just 10 min to make this dahi vada.

What is the difference?

Dahi vada is generally made only with urad dal. While bread dahi vada has bread and paneer in it. 

Well made and well soaked bread dahi vada have a melt in the mouth texture with the crunchiness of nuts. It is very healthy too, as these vadas are not fried. Moreover, the sweet and sour tamarind chutney and flavourful spicy green mint chutneys compliment the taste immensely. Various spices add flavour to it.

How to make?

Making bread dahi vada is quite easy, except there is a bit preparation work. Here are the brief steps :

  1. Great the paneer and chop coriander and chillies 
  2. Making tamarind chutney
  3. Making green chutney
  4. Cut sides of the bread 
  5. Assembling dahi vada

You can easily make chutneys a day prior. In fact, I always have tamarind chutney ready in my fridge I make it in bulk and store it in a jar as it has a good shelf life. However, I prefer to make the green mint chutney fresh on the same day

Paneer:  Paneer or cottage cheese is a High Protein Diet. Paneer is high protein diet having monounsaturated and polyunsaturated fat which helps in lowering the body weight, managing weight as well as reducing the risk of insulin resistance syndrome.

It has high level of dietary fibres which helps in digestion by improving the metabolism thus helps in reducing the weight. It is best source of calcium too.

 Nuts : They are good sources of protein, healthy fats, fibres, vitamins and minerals. Nuts regulate body weight as their fats are not fully absorbed, they regulate food intake, and help burn energy.

Curd : it is rich in potassium and calcium and has a probiotic qualities that is good for your body and gut. 

To your surprise this recipe is a very healthy treat. It is easy to digest and if you are someone who is planning to shed some weight by tweaking diet plan, then this makes for a wholesome delicious delight. With festivals around the corner, this Dahi Vada recipe makes for a delicious side dish too.

step by step Directions

  • Mix paneer, cashew, kishmish, pistachio fresh coriander, green chilli, ginger paste and salt. Add 1 tbsp of fresh cream or malai if mixture is stiff. Mix and make six balls out of it.dahi vada
  • Take a piece of Bread. Take milk in bowl. Dip bread slice in milk for few seconds and press it between your both wet palms.dahi vada
  • Take little stuffing and place on the slice cover and seal it like a ball.

  • How To Make Tamarind Chutney
  • Boil 100 gm tamarind in ½ litre of water.After water starts to boil, reduce heat and remove from heat after 5 mins and let it cool.
    Mash the tamarind and strain the juice into a bowl.
    Heat oil in a pan.Add cumin seeds and as soon as it starts spluttering remove from heat and add cumin powder,chilli powder,ginger powder,coriander powder and salt. Stir and then add the tamarind juice.
    Add 200 gm crushed jaggery and return to heat.Let mixture attain a semi thick consistency.Cool and refrigeratetamarind chutney
  • How to make pudina chutney
  • Take, 1 bunch coriander leaves, 1/4 bunch – mint leaves, 2 to 3 green chillies,1 small green mango,1 tbsp lime juice, 1 tsp sugar and salt to taste put everything in mixer and churn to paste adjust spices if required. chutney is ready to serve.

  • For Dahi Vada
  • Place all vadas in a dish. Pour curd on them generously Top it with tamarind chutney and Green coriander chutney to taste. sprinkle red chilli, chaat masala and jeera powder on them. serve chill.

Ingredients

  • Bread – 16 slice

  • Milk- 1 cup

  • For Stuffing:
  • Paneer ( cottage cheese) – 100 gm

  • Kaju  tukada – 10 to 15

  • Kishmish – 15 to 20

  • Pistachios- 5-10

  • Coriander ( chopped) – 2 tbsp

  • Green chilli, 

  • ginger chopped – 1 tbsp

  • salt – 1 tsp

  • Malai or Fresh cream as required

  • For Serving:
  • Whisked  Curd/Dahi- 1 kg

  • Red chilli powder – 1 tsp

  • Jeera powder – 1 tsp

  • Salt – 1 tsp

  • Sweet Tamarind chutney

  • Green chutney

  • Pomegranate seeds for Garnishing (optional)

  • Green coriander for Garnishing

Directions

  • Mix paneer, cashew, kishmish, pistachio fresh coriander, green chilli, ginger paste and salt. Add 1 tbsp of fresh cream or malai if mixture is stiff. Mix and make six balls out of it.

  • Whisk yogurt till smooth. pour the yogurt over the vadas.
  • Top with the green chutney and tamarind chutney as required.
  • Sprinkle the red chili powder, roasted cumin powder, chaat masala and black salt.
  • Garnish it with chopped coriander leaves.
  • Serve dahi vada immediately or refrigerate and serve later.

Notes

  • Leave vadas like this for 10-15 min so that vadas soake curd and becomes soft.
  • Use while bread for best taste. Make sure to remove corners and sides. That will give you soft as a cloud Dahi vada taste.
  • you can fry vadas in oil till golden brown if you don’t like raw  Bread.
  • To Serve Bread Vada make sure to whip yogurt/curd to creamy texture, because that makes a lot of difference in taste.
  • you can prepare it well in advance if you have time.
  • Do not skip on roasted cumin/bhuna jeera which is coarsely  roasted, It pairs so well with dahi.
  • To add little crunch garnish with red pearls of pomegranate as well.
