Aloo Palak Bhaji-Aloo palak bhaji is a simple day to day vegetable that is usually made on a regular basis in Indian kitchens. Making this vegetable is so simple that even young kids can try their hands. 

Healthy green fresh spinach is always welcome in the Indian kitchen we include so many types of green vegetables in our daily menu like sarso ka saag, palak ka saag, chana ka saag, Kashmiri Haak saag, etc. etc and some exotic dishes like palak paneer, shahenshahi aloo palak, vegetables in spinach bed you will find almost all the recipes in my blog.

However, this particular vegetable is very simple to cook and very healthy to eat. Spinach and potatoes make an excellent combination, my grandma used to say that the nutritious value of this vegetable increase when you cook it in an iron skillet so I usually try to do that. Enjoy this simple yet healthy ‘Aloo Palak Bhaji ‘.

This Aloo Palak is one of my personal favourites. My mom used to make it a lot during winters when we would get really good fresh spinach in the market. In fact, potatoes with any greens would be a constant feature on our table during winters. I have always enjoyed my greens and this aloo palak is something I make often.

Other Ways To Make Aloo Palak Curry:

Aloo palak can be made in a number of ways. I also make it in several ways, sometimes I add water to the spinach and make it like curry and then add potatoes to it. However, stuffed dum aloo on spinach bed is one of my favourites I often make that for my house parties. will definitely share the recipe soon. 

The version I’m sharing today is a dry version of aloo palak. It comes together quickly and what I like most about this recipe is that it uses simple spices and ingredients. The best recipe for beginners and amateur chefs. 

In fact, This recipe in a way is a reflection of what I grew up eating. Such simple sabzi like this aloo palak, dal, and roti used to be my lunch and dinner every other day. Though, the recipe is very simple but, I am sharing this recipe with my young and beginner chefs. So I thought a step by step recipe would be easier to follow.

Types of Utensils Required:

As I told you earlier also that I prefer to cook greens in an iron skillet. Recently, I bought one and that is really good so I would like to introduce that to you. In fact, This is the best iron pan I bought, it is multi-purpose and with a lid too.

STEP BY STEP Directions

  • clean and wash spinach and cut potatoes in square pieces. spinachchop
  •  Heat oil in a large pan on medium heat. Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds. Then add hing, chopped garlic, and dried red chillies. Break the dried red chillies before adding them to the pan for more heat.spinach aloo
  • Cook for 1 minute until the garlic starts changing colour. Stir in the chopped potatoes and mix. Add turmeric, coriander, red chilli powder and salt along with 3 tablespoons of water. aloo palak bhaji
  • Toss to combine until all the potatoes are well coated with the masala. Close the pan with a lid and let potatoes cook for 6 to 7 minutes until almost done on medium heat. Open the lid and stir every 2 minutes or so. aloo
  • Stir after each addition until the leaves. wilt. Cook for 3 to 4 minutes after adding all the spinach. aloo palak
  • Add garam masala and mix. You may skip the garam masala here if you want to keep it super simple. Squeeze in lemon juice and mix. There shouldn’t be any water left at this point.

Aloo Palak- aloo palak is a simple day to day curry with the goodness of iron and vitamins. This curry is super easy to make and best for beginners.

Ingredients

  • 2 teaspoons oil, I used mustard oil

  • 1/2 teaspoon cumin seeds

  • pinch hing also known as asafoetida

  • 5-6 large garlic cloves chopped

  • 3 dried red chillies broken

  • 2 medium potatoes around 500 grams, cut into small pieces, around 1/2 inch

  • 1/4 teaspoon turmeric powder

  • 1/2 teaspoon coriander powder

  • 1/4 teaspoon red chilli powder

  • 1/2 + 1/8 teaspoon salt or to taste

  • 3 tablespoons water as needed

  • 300 gm spinach finely chopped, around 2 to 3 cups finely chopped spinach

  • 1/4 teaspoon garam masala

  • half lemon juice of

Directions

  • Serve aloo palak with a side of roti.
