Ingredeants:
500 gms bottle gourd (doodhi / lauki) ,
peeled and grated
2 cups milk
1 cup mava (Thickened milk)
1 cup sugar
5 tbsp ghee/clarified butter
15 cashewnuts (kaju)
1/2 tsp cardamom (elaichi) powder
Saffron few strings
Method :
Heat 3 tbsp ghee in a pan, add the cashew nuts and fry till golden brown. Remove and keep aside.
Add the bottle gourd to the same pan and saute on medium flame for 2 minutes.
Add the hot milk and keep stirring till it reduces and become thick.
Add the sugar, mix well and cook ,till it reduces.
Add the mava /thickened milk ,2 tbsp ghee ,cashews and cardamom powder and mix well.
When the halwa is cooked and becomes thick, mix saffron in 2tbsp milk and add in halwa . Garnish with roasted cashew nuts and Serve hot .
