Tamatar Ka Bharta- Tamatar ka bharta is a very tasty, tangy and flavourful dish. It is very simple to make curry. You can easily serve Tamatar Ka Bharta with roti or naan.

During my childhood, I loved to take this vegetable in my tiffin box and to date my likings towards Tamater Ka Bharta is the same. This tangy, tasty and a bit spicy veggie is easily included in my daughter’s tiffin box menu chart also and now that they have grown older it is included in lunch and dinner menus. I want to dedicate this particular recipe to my grandma. I really want to say a big Thank you to my grandma for this delicious recipe ummmmma and thanks to grandma for your special dishes……….. try this recipe and tell me how you like it.

Now, this tamatar bharta is not your regular tomato bharta. It’s very different. Rustic, rich, smoky with robust flavours coming from mawa, garlic, green chillies and lemon juice. Totally yum. This recipe is very simple and quick to make. 

How To Make Tamatar Ka Bharta :

  1. Roasting Tomatoes:

Rinse tomatoes very well in water first. Then place them on a wired grill rack and begin to roast the tomatoes. You can also place them directly on the stovetop. You can also grill the tomatoes or roast them in the oven. But then you won’t get the smoky flavour. Turn them after a few minutes for even roasting.

The tomatoes should get charred. Roast the tomatoes till they are completely cooked from within. With a knife check the doneness. The knife should be slid easily into the tomatoes without any resistance. Peel and chopped finely and keep aside.

  • 2. For masala:

peel and chopped onion’s, chopped green chilly and crush mava with fingers heat a pan on fire put oil in it and add jeera, stir till crackling add chopped onion and ginger garlic paste in oil, stir well cook till oil separates now add 1 tbsp tomato puree and all dry masala, mix well.

Add dry fruits, mix well now add mava and” bhoono” it properly I mean cook till oil separates now add peeled and chopped tomatoes in it and cook again till done garnish with green coriander and serve hot with” Garma garam” parantha or naan.

Ingredients

  • tomato’s-6 to 7 big

  • onion ……..3 big

  • ginger&garlic paste……2tsp

  • green chilly……….1 tsp

  • mava / thickened milk……………….3 tbsp

  • cumin seeds………1tsp

  • coriander powder……1 tsp

  • Kashmiri red chilly powder…..1/2 tsp

  • turmeric powder…………1/2 tsp

  • salt…..as per taste

  • dry fruits like cashew and almonds and raisins 10 to 15

  • green coriander chopped ……….3 tbsp

  • oil ……..3 tbsp

Directions

  • Grill(you can use a gas stove for that)for grilling just burn upper layer of tomato on fire and peel  tomatoes and chopped finely  keep aside
  • peel and chopped onion’s, chopped green chilly and crush mava with fingers
  • heat a pan on fire put oil in it and add jeera, stir till crackling 
  • add chopped onion and ginger garlic paste in oil, stir well cook till oil separates
  • now add 1 tbsp tomato puree and all dry masala, mix well
  • add dry fruits, mix well now add mava and” bhoono” it properly i mean cook till oil separates
  • now add peeled and chopped tomatoes in it and cook again till done garnish with green coriander and serve hot with” Garma garam” parantha or naan
  • parantha and naan are Indian bread which is made of wheat or whole wheat flour
