SWEET RICE ‘ZAFRANI ZERDA PULAV’

Zafrani pulao recipe a mildly sweet pulao made with saffron and nuts as main ingredients. Full of sweetness and spice, with a little added crunch from the toasted cashews and pistachios. Saffron adds wonderful golden colour to this celebratory Kashmiri dish.

Bhai Dooj Prasad:

This pulao is a sweet pulao, we make this pulao on the auspicious occasion of Bhai dooj that comes one day after the light festival Diwali. Bhai Dooj, which is observed two days after Diwali, is celebrated to praise the bond between a brother and a sister. Also known as ‘Bhai Beej’ or ‘Bhai Tika’, Bhai Dooj has a lot of similarities with Raksha Bandhan.  We use this as a prasad for Bhai dooj puja. However, this pulao is so tasty and flavourful that you can easily include it in any party menu as a dessert.

I always use long grain basmati rice to make zafrani pulao. Good quality saffron and cardamom gives the colour and aroma to this delectable rice dish.

Serving Suggestion:

We usually serve this rice after food as a dessert, but this can be consumed like a full meal too. If you have a sweet tooth like my husband then you can have it like a meal. You can pair up it with fresh malai or milk cream.

This recipe is a very simple and quick recipe of sweet pulao. you can also use leftover rice to make this recipe. I used a rice cooker to cook the rice and then layered them in a glass bake dish.

sweet rice or zafrani pulav is an Indian sweet rice delicacy with the aroma of cardamom and saffron and crunchiness of nuts. Amazing rice.

Ingredients

  • basmati rice long grain rice”-1 cup

  • khada masala/mix spices  like -cinnamon, clove, cardamom, aniseed and javitri roast and crush – two tbsp

  • dry fruits like – almonds, cashew nuts, kishmish / raisins  – crushed -4 to 5 tbsp

  • saffron, cardamom mix in 1/2 cup of warm milk

  • sugar – 3/4 cup

  • ghee- 1 tbsp

Directions

  • wash and cook rice till done.
  • take a micro safe squire glass container, add 1 tbsp ghee and 1 tbsp khada masala 
  • micro high for 1 min.
  • now take it out and put a layer of rice on top of it spread around 1/4 cup of sugar then dry fruits sprinkle some saffron mix milk on top and then put the second layer of rice following the same proceeder lay around three layers of rice.
  • micro cook for at least 7 to 8 min now take it out and mix it well cover and cook for another 2 min
  • serve hot or chill whatever way you like it.
