VIRGIN PIÑA COLADA – Piña Colada is a refreshing summer drink. Next time you’re having a spring or summer party, try this virgin piña colada recipe. This made-from-scratch drink is so refreshing and rich that you won’t even miss the alcohol.

It’s been a long time Since I  updated my blog. I was busy with my daughters and relatives, however, I did explore some places and met many wonderful people and I want to share their thoughts and recipes with you all. Will share one by one. Extreme summers and scorching heat is in almost every part of India, the temperature is just going up, up and up. We all are looking for some coolers and smoothies.

I have some excellent recipes in my storage and wanted to share with you, most of them are very healthy for kids, unfortunately, I have lost all my pics of coolers as my computer hard drive crashed, but I just don’t want to miss this opportunity to share my simple step by step recipes with you all to enjoy in this scorching summer ..try these tangy tasty coolers and stay cool. I prefer fresh juices in coolers but if not readily available, you can use readymade juices choice is entirely yours this will not affect the taste.

My favourite mocktail is piña colada a very tasty and refreshing drink with the concoction of coconut milk and pineapple. Pineapple and coconut both are very nutritious. In fact, coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow’s milk, coconut milk is lactose-free so can be used as a milk substitute by those with lactose intolerance. It is a popular choice with vegans and makes a great base for smoothies, milkshakes or as a dairy alternative in baking.

However, The vitamins and minerals in pineapple could help shorten viral and bacterial infections and strengthen your bones. There’s also a little evidence that pineapple may help prevent cancer and even help fertility by improving the quality of sperm.

Ingredients For Making Virgin Piña Coladas

Coconut: For the coconut component, use cream of coconut or coconut milk.

Pineapple: I like fresh pineapple juice to make this mocktail. However, if you want you can use store-bought pineapple juice.

Vanilla Ice-Cream: Vanilla Ice Cream adds a creamy texture to this mocktail.

Lemon Drink- Last but not least. I like to add limca or sprite ( Areated lemon drink) to the top of each glass just before serving. This drink floats on top of the drink and adds a special flavour to the drink.

Piña Colada is a refreshing summer drink. Next time you’re having a spring or summer party, try this virgin piña colada recipe.

Ingredients

  • 3 cup fresh pineapple juice/readymade juice

  • 1/2 cup coconut milk

  • 2 tbsp sugar syrup

  • 1 tsp lemon juice

  • 5-6 tbsp vanilla ice cream

  • 1 bottle aerated lemon drink

  • For garnishing – pineapple wedge, coconut wedge and a cherry

Directions

  • Mix pineapple juice, coconut milk, ice cream and ice cubes in a blender. Blend for a few seconds.
  • Pour the chilled aerated lemon drink in a mixture, blend again for a second.
  • Serve immediately and garnish with a pineapple wedge a coconut curl and a cherry stuck on a stirrer stick or on the rim of the glass.
