Salads can be healthy, satisfying meals on their own or perfect accompaniments to main dishes. Whatever sort of salad they are perfect for your diet plans as well. Even though it is not a very extraordinary dish but I just had to share this one with you. This weekend was a cool and rainy one. In winters I generally like to sit near the fire and avoid any cooking. However, I had to make something for my family. I know very well that they will not say no to a big bowl of creamy soup and a bowl full of nutritious salad. This salad is a load of fibre and protein and goodness of cheddar cheese, and all kinds of good stuff. This is designed for a perfect day start.

Best Salad Ever

This is my first time making this recipe, but it is already becoming one of my favourites that I know I will be making time and time again this year. The peppers add a spicy, smoky taste, and the cheese mellows out all of the flavours. This is a curd based creamy salad, also great for diet plans.  I like to top the bowl with a little more cheese and thinly sliced nuts and serve it up with some warm, crusty bread croutons.

The ingredients are very simple just dig out your fridge and use all possible vegetables. You can put any type of vegetables like cabbage, carrot, peas, corn, baby corn, mushrooms, potatoes, spinach and all other possible vegetables which you want to use. I love to use pasta in it you can also use the same. This is why this will become a full meal.

sunrise salad is one of my favourite salads it is very nutritious and best goes with a cup of soup and garlic bread.

Ingredients

  • Carrot….2 cut into small squares

  • Cabbage….1/2 cup shredded

  • Peas…….1/2 cup boiled

  • Corn ……1/4 cup boiled

  • Potatoes….2 boils and cut into small squares

  • Spinach leaves….5-6 just chopped randomly

  • Apple……….1 big cut into squares

  • Pomegranate Carnell’s ….as required ( optional )

  • Small cubed Parmesan cheese a few ( optional)

  • Salad leaves….4-5 chilled and break into pieces with hands

  • Fettuccine pasta…..1 cup ( boiled and drained )

  • For creamy dressing
  • 1 cup hung curd *

  • 1 tbsp full-fat fresh cream (optional)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp dried parsley

  • 1 tbsp chopped coriander

  • 1/2 tbsp chopped mint leaves

  • 1/2 tsp powdered sugar

Directions

  • Mix all the ingredients of dressing in a bowl and keep aside.
  • Take a big mixing bowl and put all the ingredients into it add dressing and mix well.
  • Keep in a refrigerator till the time of serving.
  • Serve in a salad serving bowl and enjoy !!
  • For hung curd 
  • Take 11/2 cup of fresh curd and drain it through a muslin cloth or cheesecloth drain all the water out of it or hang it for an hour till all excess water is drained out. Your hung curd is ready to use. garnish the salad with warm crunchy bread croutons.
