Waldorf vegetable salad- Waldorf salad is a favourite salad around here, particularly in the fall when apples and walnuts are in season. It’s especially popular around the holidays, gracing many a light winter lunch spread.
The original recipe consisted only of diced red-skinned apples, celery, and mayonnaise. Chopped walnuts were added later to this new American classic.

As you know that these days we are posted in Kashmir and with God’s grace, my garden is full of apple and walnut trees. I am preparing lots of apple and walnut dishes these days because I have plenty in my pantry. however, you can prepare this salad anywhere. Just a few ingredients and done.
Mayo or Yogurt for Waldorf Salad?
Some prefer their Waldorf vegetable salad made with yoghurt, instead of mayo. I usually stay in the mayonnaise camp (which is what we are using in this recipe), but feel free to substitute yoghurt for the mayo if you prefer. In which case you may need to add some honey to offset the added tartness of the yoghurt.

Waldorf Vegetable Salad

kcalWaldorf salad is a very simple fruity and nutty salad that can be served on any winter lunch or dinner menu.
Ingredients
500 GM red apples, diced
3tbsp fresh lemon juice
150 ml mayonnaise
1 head celery
4 shallots (spring onion or small onion)
1 garlic clove, crushed
90 GM walnuts, chopped
500 GM paneer or cottage cheese, cubed
1cos lettuce
Pepper
Chopped walnuts, to garnish
Directions
- Place the apples in a bowl with the lemon juice and 1tbsp of mayonnaise. Leave for 40 min
- Slice the celery very thinly. Add the celery with the shallots or onions, garlic and walnuts to the apple, mix and then add the remaining mayonnaise and blend thoroughly.
- Add the cottage cheese and mix with the other ingredients.
- Line a serving dish with the lettuce. Pile the salad into a serving bowl, sprinkle with pepper and garnish with the chopped walnuts.
