Rice Phirni: Rice phirni is a traditional Indian sweet. A different part of India have their own types of phirni—Punjabi phirni and Kashmiri phirni are especially well known. Kashmiri Phirni is known as Kashmiri phirun, the only difference between these two is that phirun is made with grounded rice and saffron more like a thick kheer and in Punjabi Phirni we use rice flour rest all the ingredients are the same.

Sweets are a very important part of Indian cuisine, in some parts of India sweets are essential after a meal and in some parts, they offer sweets before a meal. Sweets are offered to God as prasad also on auspicious occasions. Phirni is Mughlai sweet and very tastefully preferred by Indians. 

Even though it is sometimes confused with rice kheer because of the use of rice grains, yet there is a slight difference. basically, for phirni the rice grains are soaked in water and grounded to a coarse paste which is later mixed with thickened milk.

In my house, phirni is one of the favourites among all the Indian sweets as it is very simple to make and very delicious. I am giving you step by step recipe for the phirni just follow the steps and all done.

Rice phirni is a traditional Indian sweet. Phirni is Mughlai sweet and very tastefully preferred by Indians. It can be served as prasadam.

Ingredients

  • Full-fat milk……………….3 cups

  • Rice………………………….1/4 cup

  • Almonds…………………..8-10

  • Sugar……………………….5 tbsp

  • Saffron……………………..7/8 strings

  • Green cardamom powder..1/2 tsp

  • Rosewater…………………1 tsp

  • Silver leaves………………1

Directions

  • soak almonds in hot water for five min. drain, peel and chop.
  • wash and soak rice in sufficient water for half an hour
  • Drain and grind soaked rice into smooth paste dilute this past in half cup of water
  • Now boil milk in a saucepan reduce heat, and add rice paste in it cook on a medium flame for about five to ten min, stirring continuously or till the mix thickens
  • Add sugar, chopped almonds and cardamom powder. Add saffron strings to it, remove from heat and stir in rosewater.
  • Remove and pour into earthenware bowls garnish with silver leaves and chill in the refrigerator for an hour before serving.  Decorate with rose petals and serve chilled.

Step By Step Recipe of Rice Phirni:
