Lauki paneer ki sabji Dudhi paneer sabzi or lauki sabzi is an easy and slightly spiced version of lauki sabzi. Lauki is also known as a bottle gourd or opo squash in English. In some other Indian languages, lauki is known as ghiya, dudhi, sorakaya, sorakkai etc. It is one of the healthiest vegetables and is excellent to have during summers.

 learnt this Punjabi lauki recipe from my mother-in-law. I added paneer to it as my daughters are not very fond of lauki ki sabji. We usually make this sabzi slightly spicy as the spiciness goes well with the bland taste of lauki. The recipe I have shared is not spicy. You can always add more green chillies, red chilly powder and garam masala powder for a spicy taste.

In this recipe I added dry fruits and cream to make it more tastier and healthier. though if you like simple lauki ki sabji then you can leave dry fruits and cream. People specially kids have an aversion to this vegetable but belive me once you taste this sabzi you will love it.

Lauki paneer ki sabji Dudhi paneer sabzi or lauki sabzi is an easy and slightly spiced version of lauki sabzi.

Ingredients

  • Bottle gourd (lauki) …………1 medium size ” take fresh and soft bottle gourd”

  • Paneer or cottage cheese ……1 cup “i prefer homemade fresh crumbled paneer/cheese”

  • Onion……………………………….3 big ” finely chopped”

  • Tomatoes…………………………..3 mid” finely chopped”

  • Dry fruits …………………………. around 1/4 cup ” you can take any nut of your choice i prefer almonds as

  • they have good nutritive value”

  • fresh cream……………………….3 tbsp

  • curd…………………………………2 tbsp

  • salt…as per taste

  • red chilli, coriander powder, turmeric powder, garam masala ………1 tsp each

  • green chilli….. 1 chopped

  • cumin seeds…..1 tsp

  • coriander …….finely chopped for garnishing

Directions

  • peel and wash bottle gourd and chop into small peaces.
  • Heat a pan add 2tbsp oil in it  add cumin seeds when crackle add chopped onions and green chillis in it stir till light golden.
  • Now add tomatoes and all dry masalas and salt.
  • Now add lauki in it and cover till lauki turn tender.
  • whisk fresh cream and curd together and add in vege cook till blend properly now add roasted nuts in it and garnish with green coriander and serve hot with lachcha parantha.
