Sometimes you want to do something very different from your regular routine and want to explore special things from all around and I usually do that …today I found some leftovers in my fridge and I started exploring for something really great. Get ready to add a new favourite dinner to your weekly rotation… pizza pockets!!!!

How to use leftovers:

These are so tasty that everybody in your family will love them and the best part is you can use up food or leftovers from your fridge for the fillings. Little ones might especially enjoy making their own pizza pocket so don’t be afraid to get them involved. Their friends might like to help as well, for the next sleepover or birthday.

These crescent roll pizza pockets take only about 5 minutes to make, and they are so yummy. These can also be made in different ways, using different fillings

Pizza pockets are delicious tea-time snacks which can be made easily at home. Just follow step-by-step instructions.

Ingredients

  • Basic pizza dough …….1 recipe

  • Oil …2 tbsp

  • Onion …………..2 chopped

  • Baby corns……200 gm cut into very small pieces

  • Mushroom ………1 cut into thin slices

  • Capsicum ……..1 diced

  • Garlic ……4-5 flakes, crushed

  • Tomato purée ….1/3 cup

  • Tomato sauce ….1 Tbsp

  • Oregano(dried) …1/2 tsp

  • Salt …..as per taste

  • Pepper ….to taste

Directions

  • To prepare the spread, heat 1 Tbsp oil. Reduce heat. Add garlic. Stir and add chopped onion in it and cook till translucent. Add baby corns, and mushrooms ( I used mixed vegetables a leftover of the previous night )  stir and cook for a few min. Add capsicum. Stir and add tomato purée, tomato sauce, salt and pepper. Simmer for 3-4 min on low heat. Add oregano/pizza seasoning. Cook for 2 min till thick.
  • To prepare pizza pockets
  • Make 6 balls. Roll out a little and flatten each to a thin square pizza, even thinner than 1/4″. Prick each base with a fork.
  • Brush pizza base with butter.
  • Spread sauce on the centre of it leaving all sides free and sprinkle grated cheese on top now fold all the corners to make pockets and seal ends with the help of water.
  • Bake pockets in a preheated oven at 180 C for 15 min.
