Apple korma– Apple korma is a rich luxurious curry dish made with apples and a lot of dry fruits. This recipe is flavorful and mildly sweet. It is made with consists of plenty of nuts, dry fruits, assorted vegetables, fruits, cream, a lot of spices and a few herbs. This recipe is a similar version of navratan korma.
korma or kurma is a dish with yoghurt, cream, nuts and seeds paste. The nuts and seeds base together with the mixed fruits make this dish nutritious but it is also rich and heavy. There is cream, yoghurt and also a rich paste made with melon seeds, cashew, almonds and poppy seeds. Overall it is a luxurious and heavy dish that you can make and enjoy for special occasions.
I make this korma in two ways, with vegetables and without vegetables. Though I use very selective vegetables in apple kurma like peas or mushrooms.
The second way is without vegetables. The recipe which I had shared is below. This recipe is creamy, flavourful, very rich and a little sweet.
Apple korma is an easy recipe because after you are done making the paste. Then all you have to do is brown the onions with whole spices, add the paste, curd, and veggies and let the korma simmer till the veggies are cooked.
All in all this shahi apple korma is a dish to be thoroughly enjoyed on festive occasions like Diwali or Holi. So I thought of sharing this rich and royal recipe with all of you on the occasion of Holi.

Ingredients
- For apples
4 ….big golden apples
2 cup water ……to boil
- For Korma Gravy
2 medium onions, chopped
3 flakes garlic, crushed
1-inch ginger, crushed
3 large tomatoes, pureed
1 tsp red chilli powder
1/2 tsp garam masala powder
1/2 tsp dhania(coriander) powder
1/2 tsp cumin powder
2 tsp powdered poppy seeds
1/2 tsp sugar
1 tbsp ground cashew nuts
1/4 cup mixed nuts and dried fruits
1/4 cup curd+ 1/4 cup fresh cream mix and whip
Directions
- For Apples
- Cut apples into cubes and boil in 2 cups of water till they become a little soft, you can steam or microwave also if you want. My apples were a little hard so I used the boiling method, you can decide for yourself if your apples are soft then you can steam or sauté, even micro is a good option.
- For Kurma
- Soak 4-5 cashew nuts and 1tbsp poppy seed in 4tbsp of water. If you are not using powdered seeds and nuts.
- Heat oil in a pan add cardamom, and cinnamon and stir for a min, add onion, garlic & ginger sauté for a few min till light golden brown.
- Cool and grind into a fine paste
- Add the pureed tomatoes and the masala powders.
- The gravy will begin to thicken.
- Mix cream and curd together and beat it properly
- Add cream and curd mixture into it.
- Mix in some water if necessary.
- When the gravy comes to a boil add sautéed apples in it
