Mushroom spinach curry || Mushroom & spinach stir fry

Mushroom and Spinach Malai Curry is a simple stir fry. However, you can also make this by adding a little tomato-onion masala. After adding fresh cream and crushed paneer the flavour of the dish will enhance. You can serve it along with tandoori roti and herbed rice to make it a complete meal.


I have always been a huge fan of mushrooms. That’s why I tend to make lots of mushroom curries in my home my daughters also love mushrooms. In fact, I would like to suggest to you a few of my mushroom recipes, like Daab mushroom (mushroom cooked in tender coconut), potato basket topped with saucy mushroom corn, Stuffed bread with corn and mushroom filling.

Secondly, Mushrooms are naturally low in sodium, fat, cholesterol, and calories and are often referred to as “functional foods.”  The fibre, potassium and vitamin C content in mushrooms contribute to cardiovascular health.

A very tasty stir fry with goodness of mushroom and spinach.

Ingredients

  • Ingredients

  • 1 cup sliced onions

  • 1 cup sliced and blanched mushrooms (khumbh)

  • 1 cup shredded spinach

  • 1 cup crushed paneer

  • 1 tomato chopped

  • 1 tsp oil

  • 2 tsp garlic & ginger paste

  • 1/2 tsp cumin seeds

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • 1 tsp turmeric powder

  • salt to taste

  • 1 tbsp fresh cream

Directions

  • Heat the oil in a broad, non-stick pan, add the garlic paste, ginger paste and fry on a medium flame for 1 minute.
  • Add the sliced onion, shredded spinach, paneer and mushrooms, mix it gently and fry on a medium flame for 2 to 3 minutes.
  • Add tomatoes mix gently, add the salt, chilli powder, coriander powder and turmeric powder mix it well and fry on a medium flame for 1 to 2 minutes.
  • Once done, switch off the flame and add fresh cream mix nicely, garnish with coriander greens and serve it with hot steamed rice or roti.
