Chickpea Salad- Chickpea salad is a tasty, healthy, and protein-rich salad. In fact, This salad is the best diet food for those who wanted to follow a protein-rich diet.

My Army Travel:

As I mentioned earlier, in the army, life is full of uncertainties. However, with time we all get used to it and start enjoying the upcoming challenges and leave everything to almighty. We were lucky that this time we got the opportunity to move to the city of joy, Kolkata in West Bengal! Being a first-time visitor I was very excited and enthusiastic. In fact, I wanted to explore the new city, its new culture, the world-famous Bengali cuisine, and most importantly the positive and fun-loving people of Kolkata. This city is indeed full of joy and josh.

My Diet Plans:

I am extremely excited to share my experience with you all from West Bengal. However, wanted to first share a bunch of healthy recipes as I had promised earlier. We all want to be fit and healthy and so we spend hours on the internet looking for diet plans and recipes but none of them works. Most of us are able to follow them for a while but soon enough the food gets too bland and sad for us to continue. In fact, We get a craving and unfortunately fail at continuing the diet plans. I know, we’ve all been there!

However, I realized that the reason we are failing at diets is because of the bad taste of the diet food. But what if, the diet food was to taste as good as our favourite foods or even better! You probably don’t believe me now, but wait till you try the recipes in my new collection: Healthy and Tasty Diet Food. Trust me I’m just like you and delicious food is very important to me but these diet recipes work wonders!

Healthy Salad:

Today, I will start with a new series of healthy salads. As a matter of fact, vegetables in salads are a good source of insoluble fibre which keeps your gut healthy. However, a good healthy salad consists of fibre, protein, and is packed with antioxidants. In fact, many salad basics, including tomatoes, sweet peppers, and greens, are chock-full of antioxidants. In fact, the greens alone have calcium, iron, potassium, and B vitamins.

Full of protein and nutrients chickpea salad is one of the best salads also very simple to make.

Ingredients

  • For the salad:
  • 1 cup of chickpeas, soaked and boiled

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1/2 small red onion, chopped

  • 15 small tomatoes, halved (about 1 cup)

  • 1/3 cup pitted olives

  • 1 medium cucumber, sliced and quartered

  • For the dressing:
  • 1 1/2 teaspoon olive oil

  • 2 tablespoons freshly squeezed lemon juice

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • A little Feta Cheese (optional)

  • freshly ground salt and pepper, to taste

Directions

  • Place all salad ingredients into a large bowl and toss to combine.
  • In a small bowl, whisk together olive oil, lemon juice, garlic and oregano. Pour onto salad and toss again to well combine. Taste and add salt and pepper as you like.
  • Place in refrigerator for 1 hour to marinate, or serve immediately.
