 Today I am sharing a very delicious paneer dish I.e. Mughlai Nargisi Kofta Curry. A very famous Kofta curry of Mughlai Cuisine.

At this time, when we are facing a very critical time all around the world because of the pandemic, most of us are in the same boat when it comes to depression and anxiety and trying to fight with the situation around. I feel love is the only feeling which can help us come out of such situation. 

love isn’t always about romance. We all receive and give love in so many different ways to so many different people in our lives. Additionally, I think we can all agree we all need love. It’s absolutely necessary for having a happy life. Considering these tough times,  I have decided to discuss today a few thoughts on the subject. I’d love to hear your thoughts as well.

If we show love and compassion towards our family, friends and fellow human beings (and animal), I truly believe that the love will be reciprocated. When a person is loved and adored, they become happier human beings. This will surely give them strength to cope with difficult times, no? Knowing you have the love and support of your family and friends gives you courage like nothing else. Can you imagine what the world would be like if everyone did this? However, in trying to be more compassionate towards others, you shouldn’t open yourself up to being hurt as well. 

Coming back to the Recipe:

Nargisi Kofta is a rich exotic Mughlai recipe, which consists of a combination of mutton keema and boiled eggs. Marinated mutton keema wrapped around hard boil eggs and braised into spicy rich yoghurt gravy is called Nargisi Kofta Curry. We vegetarians had evolved a vegetarian version of this traditional kofta curry. This exotic curry goes best with chur-chur paratha.

It is a great paneer recipe to cook for a special occasion or dinner party. Koftas have always been an integral part of Shahi Mughlai Cuisine which is known for its non-vegetarian specialties. Nargisi Kofta is an extremely popular dish that is savoured across the country. Here is an easy and quick vegetarian recipe of Nargisi Kofta that is mouth watering and an excellent choice for dinner parties where you can serve these as an appetizer or dip them in your favorite curries and serve as a main course dish.

Veg Nargisi Kofta Curry, an ultimate dish for the family get togethers and parties. Egg is substituted by paneer and keema with potatoes. Enjoy veg Nargisi Kofta!!

Ingredients



  • How to Make Vegetarian Nargisi Kofta:
  • For First layer
  • 4 Potatoes boil and peeled

  • 3 Bread slices

  • 4 tbsp soya granules

  • 1 tsp ginger garlic paste

  • 1/2 tsp garam masala

  • Fresh Coriander

  • 1 green chilli

  • Salt and pepper as required

  • For the second layer :

  • 150 gm of paneer grated 

  • Salt as per taste

  • For the third layer:
  • 150 gm paneer mashed

  • Salt

  • Saffron 5-6 strand

  • 1 tbsp milk

  • 1 tbsp malai

  • A pinch of nutmeg powder

  • A pinch of cardamom powder

  • For Gravy :
  • Butter……….3 tbsp + 1 tsp Oil

  • Bay Leaf…….2

  • Cloves……….2

  • Cinnamon…… 2 one-inch

  • Ginger …………2″ Inch

  • Garlic……………3 to 4

  • Tomato puree……..3 to 4 tbsp

  • Tomato ketchup…… 1 tbsp

  • Fresh cream ……….1 cup

  • Dry masala / spices:-

  • Coriander Powder…….1 tsp

  • Red Chilly Powder…………1/2 tsp

  • Turmeric Powder……..1/4 tsp

  • Coriander Powder……1/2 tsp

  • Salt as per taste

  • Sugar……..1/4 tsp

  • Kasoori methi ….1/4 tsp

Directions

  • Boil potatoes and nutri nuggets granules separately. Drain water from nutri and keep aside.
  • Mix together potato’s, nutri, bread, ginger paste, garlic paste, salt, black pepper powder and garam masala powder. Divide into six equal portions.
  • For second layer:
  • Mix grated paneer and salt together to make a soft dough. This will substitute of egg white portion of the Nargis kofta
  • For third layer:
  • Mix all the ingredients in mashed paneer make a soft dough. Divide into six equal portions. This will substitute of egg yolk portion of the Nargis Kofta.
  • How to Proceed:
  • Take one portion of the second layer paneer mixture in your hand and spread it slightly, keep last layer ball in centre and roll it. Now cover it with potato mixture. Roll it in refined flour and keep it aside. Similarly prepare the remaining koftas.
  • Heat sufficient oil in kadai and deep-fry balls on low heat for ten minutes or till they turn golden brown.
  • Drain and place on an absorbent paper. Lightly roast caraway seeds, green cardamoms, cloves, cinnamon and mace.
  • For Gravy :
  • Heat three tablespoons butter with one teaspoon oil in a kadai. Add bay leaves, cloves, cinnamon and Cardamom. Sauté for half a minute.
  • Add ginger and garlic paste saute,add tomato puree and cook for another thirty seconds. Add Tomato ketchup, coriander powder, red chilli powder and turmeric powder and salt. Cook on high heat till oil leaves the masala.
  • Switch off the Gas and let it cool for 5 min. Add milk and mix well, now cook curry on low heat for 3-4 min. Till butter separate.
  • Sprinkle kasoori methi and mix in lightly. Remove from heat and mix in cream. Serve hot, garnished with coriander sprig.
  • Simmer for five minutes. Just before serving add koftas.
