I always disliked all the recipes of bitter gourd. However, my attitude against bitter gourd was changed by my husband. He loves bitter gourd especially sweet and sour, stir fry and stuffed bitter gourd. You will find most of the recipes in my blog. Today I am sharing a Punjabi style recipe shared by my mom. In this recipe, we extract all the bitterness of karela by soaking it in salt and later rinsing it with cold water.

Bitter gourd/ Karela has several health benefits and offers myriad medicinal properties. Firstly, It helps to improve immunity and fight against infections. Secondly, bitter melon or bitter gourd can help reducing or cure diabetes. Furthermore, It can help reduce blood sugar.

Khatta Meetha Karela goes very well with roti or chur chur paratha.

Ingredients

  • Karela / bitter guard …….. 4-5 mid-size

  • Onion……………. 3 big

  • Green chilli………..2

  • Garlic …………….7-8 cloves, crushed

  • Tomatoes ……….3 big

  • Cumin seed………1/2 tsp

  • Fennel seeds powder……1/2 tsp

  • Coriander powder…………1/2 tsp

  • Red chilli powder……………1/4 tsp or as per taste

  • Turmeric powder…………..1/4 tsp

  • Salt ….as per taste

  • Tamarind paste …………..1 1/2 tsp

  • Sugar ………………………….. 1 tsp

  • Mustard oil ………………….4 tbsp

Directions

  • Chop bitter gourd into medium pieces, and remove the seeds and spongy centres. transfer the sliced bitter gourd into a large bowl and add a tsp of salt. mix well and allow it to rest for 20-30 minutes. now rinse the bitter gourd under cold water.
  • Chop onion, green chillies and tomatoes and keep them aside.
  • Heat oil in a pan adds cumin seeds stir and put garlic paste in it. mix for a min and add onion, and green chillies stir till light brown in colour add bitter gourd in it mix well and add all the dry ingredients in it.
  • Mix, cover and cook till bitter gourd becomes tender.
  • Add tomatoes to it and mix well. add tamarind paste and sugar, cover and cook till done and oil separated.
  • Garnish with green coriander and serve hot with Indian bread
