Lotus Kebab or nadir kebab are delicious kebabs made out of lotus stem or kamal kakdi. They are crispy from the outside and juicy from the inside. These famous kebabs of Kashmiri cuisine are one of my favourites. I had shared a few more kebab recipes in my blog like

Ingredients:-
Lotus stem (kamal kakri)-1 kg
Dry mint powder-1tsp
Green coriander fresh , finely chopped-11/2 tsp
Green chillies, finally chopped-11/2 tsp
Cumin powder-1 tsp
Red chilli powder-1 tsp
Black pepper powder-1/4 tsp
Salt to taste
Breadcrumbs- 6tsp
Vegetable oil for frying
Method:-
1. Roast the lotus stem on a coal fire until large, brown specks appear all over (you can grill also in oven till done) . Then peel the skin chop the stems into thin slices and grind them into a coarse paste.
2. Add all other ingredients and mix well .
3. Divide the mixture into 25 portions, flatten each patty and shape into a round shape or any other shape of your choice.
4. Heat oil in a pan and shallow fry the patties until light brown . remove and serve hot with green chutney.
