Kothimbir Vadi- Kothimbir vadi is a delicious savoury crisp snack made with gram flour (besan), coriander leaves and spices. In the Marathi language “kothimbir” or “kothmir” stands for coriander leaves. The word ‘vadi’ means cubes or slices or wedges.

Health benefits of kothimbir vadi:

As I told you earlier Indian food and spices provide health benefits. We have always made food keeping in mind the health benefits that the food will serve us. However, My grandma always taught me how to make food with love.
Moreover, coriander/cilantro, or dhania, has great health benefits, namely treatment of swellings, lowering cholesterol levels, diarrhoea, Mouth ulcers, anaemia, digestion, menstrual disorders, smallpox, eye care, conjunctivitis, skin disorders, blood sugar disorders, etc. etc. etc.

You’ll be amazed to know that kothimbir has eleven components of essential oils, six types of acids (including ascorbic acid, better known as vitamin-C), minerals and vitamins,

So with the combination of so many health benefits, coriander is an important part of our daily meal. I am sharing a very tasty fritter made up of coriander;…. healthy crispy coriander fitters or kothimbir vadi.

Furthermore, some important tips and variations to this traditional kothimbir vadi.

Firstly, it is always recommended to use fresh green coriander leaves for this recipe. Also, make sure to clean the coriander leaves and pat dry them properly before using them in the recipe. more moisture in the kothimbir leaves would require more besan to absorb the water content.

secondly, and more importantly, the thumb rule for coriander leaves to besan proportion is 2:1.

Kothimbir vadi is a perfect tea time snack. In fact, it is best snack for any high tea it is healthy and crunchy.

Ingredients

  • Kothambir Vadi
  • 2 cups chickpea flour/besan

  • 2 cups chopped coriander leaves

  • 1 ½ cup water

  • 1 tbsp rice flour

  • 1 tsp turmeric powder

  • 2 tsp cumin seeds

  • 8 garlic pods

  • 1-inch garlic

  • 8 green chillies

  • Oil

  • salt as per taste

  • For Special Cutney
  • For special chutney

  • 1/4 cup coconut, grated

  • 2 tbsp roasted grams without skin/ Dalia

  • 2 green chillies

  • Salt as required

  • 4 Tbsp curd

Directions

  • For Kothambir Vadi
  • Wash the coriander leaves. Chop and keep them aside.
  • Make a paste out of garlic, ginger and chillies.
  • In a bowl mix chickpea flour, rice flour and salt with water.
  • In a pan heat oil.
  • Add cumin seeds, turmeric powder and ginger garlic chilli paste.
  • Stir and add chopped coriander leaves. Sauté it for a minute.
  • Now add chickpea flour mixture and stir continuously. Stir until the mixture becomes thick.
  • Turn of the heat.
  • In a square dish spray oil & Spread the mixture evenly and pat with fingers.
  • Let it cool down. Cut into square-shaped pieces.
  • Now again heat oil in a pan and shallow fry the kothambir vada till crisp.
  • Serve it hot with chutney.
  • Special Chutney
  • Grind coconut, Dalia, chillies and salt together to make a chutney. Mix in the curd and serve with kothambir vadas
