‘VEGETABLE UPMA’

Vegetable Upma– Upma is usually made with Semolina (called Rava or Suji in India). Upma can be prepared in many ways; indeed, every upma cook usually will incorporate variations in flavour when making Upma.

This traditional dish involves cooking roasted rava in water that has been flavored by ghee (or oil), cashews, urad dal (lentils), chana dal (husked chickpeas), onion, ginger and additional herbs and spices.

This steaming hot breakfast dish can be made vegan by using oil instead of ghee. Full of warmth, flavor and deliciousness, this upma tastes so good.

Chef Tips –

some more additional tips, suggestions and variants to the vegetable upma.

Firstly, the recipe has to be prepared in Bombay rava and do not attempt this with any other rava variants. as matter of fact, you may try this same recipe with other ingredients like oats, millets and even broken wheat.

Secondly, once you prepare this, I would strongly recommend serving it with some savoury side like poha or mixture. This would balance the flavour and also enhance the taste of upma.

lastly, once the upma is rested it may lose its moisture and hence it is better to reheat before you serve.

Ingredients

  • 1 cup Sooji/Rawa/semolina

  • 1 onion (chopped)

  • 2 tbsp Ghee

  • 2 cups water

  • 1 tsp white lintel / Urad Dal

  • 1 carrot chopped

  • 6 to 7 French beans

  • 1 big floret of cauliflower

  • ½  cup peas

  • 2 green chillies (chopped)

  • 1/4 tsp Ginger(chopped)

  • 1/4 tsp Cumin seeds

  • 1/4 tsp Mustard seeds

  • Curry leaves

  • 8 Cashew nuts

  • Salt to taste

Directions

  • Roast rawa in a dry skillet on low flame until it starts to give off a distinct aroma. Take it out.
  • Heat ghee in the same and add cumin seeds, curry leaves, mustard, urad dal and cashew nuts.
  • Now add finely chopped vegetables green chilli, ginger, and onions and cook again for 3 minutes cover with a lid.
  • Now add salt, roasted sooji and water.
  • Stir well and cover it.
  • Upma is ready. Serve it with a pickle.
