Lemon Rice– Lemon rice is one of the most popular south Indian rice dishes. It is comfort food for many and most fondly and commonly eaten for a meal. Lemon rice has a delicate flavor of the fresh lemon and aroma of lemon juice along with the fresh aroma of tempering.

Ohh endlessly I can talk about this place. Coming back to the topic, the army is a living example of unity in diversity. You get along with so many communities together and tend to learn about their customs, culture, and cuisine. My food style actually changes according to the set of people I get along with. However, it’s really exciting to know about different cultures. I am amazed to see so much similarity in cuisines even after so much versatility in culture.
Although I am sitting in the valley of Kashmir, today I am taking you on the journey of south India. Can’t help it because of heavy snowfall all roads are blocked. In this situation, vegetables are generally out of stock and we look for other alternatives.
Lemon Rice is a delicious South Indian dish. You can easily put together lemon rice when in a hurry or in crisis. You can also make it with leftover rice. Serve Lemon Rice with Raita (yoghurt salad) and Poppadoms (we called it papad also ) for a simple yet tasty meal. This rice preparation is well-known all over south India, although there are likely to be mild variations in the way it is performed in various regions. It is ideal to pack and take along when travelling.

Ingredients
2 cups rice, cooked or leftover rice
1 lemon
1/2 tsp mustard seeds
1 tsp Urad dal
2 dried red or green chilies
1 tsp Bengal gram
2 tbsp peanuts
A generous pinch of turmeric powder
A generous pinch of asafoetida
few sprigs of curry leaves
2-3 tsp of oil
salt to taste
* I like to add a few boiled peas also (optional )
Directions
- If you have any leftover rice, you can use it. If cooking fresh, then cook 1cup of rice with 2 cup rice till done. Spread this rice on a plate to cool.
- Heat oil in a skillet and temper it with dried red chili, mustard seed, urad dal, thing, and curry leaves.Once the mustard seeds splutter. Add the peanuts and fry it.
- Switch off the stove and squeeze the lemon in the skillet. Add peas and mix well.
- At this stage now add salt and turmeric powder and mix well. Now add the rice and mix well.
- We love it with Roasted Potatoes, curd raita and it goes well with simple papad also.
- Always add lemon after you switch off-gas.
